The Philippines is a vast archipelago of more than 7000 islands, fanning out between the South China Sea and the Pacific Ocean. It became an independent country in 1946 after centuries of colonisation by Spain and the USA but many of the islands remain untouched by Western influence. The best time to visit the Philippines is between October and March, before the stifling humidity kicks in, and don't miss the country's colourful fiestas if your visit happens to coincide with one. Most journeys begin in the bustling capital Manila, where you can explore the city's vibrant mixture of ethnic groups and foreign influences in the old walled area of Intramuros and get a perfect introduction to Filipino cuisine at the Salcedo Community Market, including local favourites like Bangus (milkfish). To experience the exceptional beauty of the Philippines head to the Hundred Island National Park, a collection of 123 limestone islets eroded by centuries of tidal movement, or to the active Taal Volcano, set in the middle of the lake.

You could then proceed to the Walled City of Intramuros to visit the remnants of Spain's conquistadores. Travel through the cobbled streets to San Agustin Church, the country's oldest stone church, and view its wide collection of ecclesiastical icons, vestments and other religious articles. Close by, you'll be pleasantly surprised at Casa Manila, a reproduction of a 19th century house equipped with oriental and European decor.
Drive along the Tagaytay Ridge for a Unique View of Tagaytay-Taal Volcano
Take a 2-hour drive south of Manila and you'll be rewarded with a magnificent vantage point of Taal Volcano surrounded by the gleaming waters of Taal Lake. You should take advantage of the native refreshments before returning to Manila, dropping by the world-famous Bamboo Organ of Las Pinas en route.
Island Swinging Off Cebu's Blue Waters
